So on the food front, I just got back from the May rendition of cooking club last night. Well technically, between then and now I managed a four hour sleep, sorted out three children and myself (Remo is thankfully, entirely self-sufficient) and I’ve done a half day’s work. Red-head Kelly is the kind of person you want to not like. She’s beautiful, she has a handsome husband, three adorable children, a stunning home and crap, she has to be nice too. Her theme was Hawaii and aloha, it was a clever choice.
Kelly started with Shelley’s pina colada’s, from scratch and they were FANTASTIC. She had two appetizers, the first being smoked salmon on a cream of something on endive leaves. Good, but it had nothing on the other one. She steamed asparagus and rolled it up with a peanut butter sauce in rice paper. I swear on my life, it was the best appetizer I ever had. I would kill for one this very moment, for lunch, for dinner, for breakfast. Next came a spinach, mandarin orange, pine nut salad, then mahi-mahi with a melon-cucumber chutney and grilled vegetables. Something went wrong with the rice, you know moody riceis, but it worked out well because it left space for dessert. Kelly made a mango cheesecake that was truly amazing. The crust had graham and oreo cookie crumbs, coconut and magic. I will post all recipes.
I’m actually only stopping in here because I wanted to recommend an awesome movie. Last weekend Remo and I signed off on a grown-up night with Claudia and Karim. We checked into the Chateau Champlain for the night, went for dinner at a real Parisian steak house, (was it ever good!) and then we went to see Crash. If you haven’t seen it, run! The entire premise is race relations and parts in there sock it to you, parts squeeze you in a vice and leave you feeling helpless and angry and sorry and grateful if you’re not filled with hate. We’re all the SAME. For how easy it is to shove on a label, the movie forces you to accept that a label is not exclusive. People float in and out of your life, affecting it, and you can’t, don’t realize the impact that passing may have. Parts of it were beautiful, hilarious and touching. I will see it again and I think it should be mandatory.
Go. Crash.
We had a week’s timeshare we needed to use up before the end of May so tomorrow we’re off to Smuggler’s Notch in Vermont. The resort is supposed to be incredible for families but it’s going to rain buckets and be freezing cold. There’s outlets and I can do a Costco/grocery run and I figure even if we end up holed up playing games the whole time, at least we’ll be together and our obligations up the wazoo will be on hold. Remo’s brother and the family might join us for a day or two and my kids would be in their glory. My only apprehension is that we hope to set off after Brandan’s soccer game tomorrow and my house is upside down and I’m not ready or organized. BUT. Lately (ok FINE, it’s been two weeks) I’ve let go of a lot of the pressure I put on myself. It’s not even intentional, I’ve just been adopting this attitude where I let go of that which stresses me. I’ll do it when I do it, get it if I feel like getting it, let it slide if it doesn’t change anything and not care if it doesn’t work out the way I planned. Not to say I’ve gone to pott or I’m smoking any either. I just don’t want to make myself crazy. It’s Remo, it’s his attitude and I love that it’s becoming catchy.
Kaillan’s joke for the day:
Knock-knock.
Who’s there?
Fridge.
Fridge who?
Fridge!!!!
(She then falls over laughing hysterically).
We continue the joke forever as every single thing that crosses her vision knocks at the door.
It’ll be a very, very long drive to Vermont.
